Longtime vendor Panayiotis Kouros awaits opening of new Sydney Fish Market

Panayiotis Kouros says he’s eagerly awaiting the move to the new $700 million Sydney Fish Market at Blackwattle Bay.

Kouros, whose family has been at the Pyrmont fish markets for over three decades and operate Boat Shed, Fish Market Café and Squid Ink, said the opening of the new venue couldn’t come soon enough.

“It’s very exciting, we’re all looking forward to it,” he told ABC News.

The NSW government confirmed construction on the long-awaited development is set to finish next month, but customers won’t be welcomed at the new facility until January 19 next year.

Kouros said his team was ready to move in as soon as the doors open.

The new markets will trade until 10pm, compared to the old 4pm close, something Kouros believes will boost business.

“It’ll be harder but it’ll be better for us… we’re never not busy,” he said.

The upgraded fish market is expected to attract over six million visitors annually once it opens.
