Niki Louca shares her orange and chocolate marble cake recipe

Niki Louca from My Greek Kitchen shares her favourite orange and chocolate marble cake (κέικ Γεογραφιας) recipe with The Greek Herald. You can follow her on Instagram @mygreekkitchen for more!

Ingredients:

  • 1 cup (227g) unsalted butter, softened
  • 2 cups, (400g) of granulated sugar
  • 4 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • 2 1/3 cups, (290g) all-purpose flour
  • 3/4 of a teaspoon salt
  • 1/2 tsp baking powder
  • 2/3 of a cup (160g) sour cream room temperature
  • 71 g 60% bittersweet chocolate melted and cooled slightly
  • 4 tsp Dutch cocoa powder, sifted
  • 2 tsp tightly, packed orange zest
  • Icing sugar, to garnish

Instructions:

1.  Pre-heat oven to 1 70°C.  Line a loaf pan of 23 x 13 cm with baking paper.

2.  In the bowl of stand mixer beat butter and sugar until fluffy 3 to 4 minutes.

3.  Add eggs, one at a time beating well, after each addition.  Beat in vanilla.

4.  In a medium bowl, whisk together, flour, salt, and baking powder .  With mixer on low, add flour mixture to butter mixture in three additions alternately, with sour cream, beginning and ending with flour mixture, beating just until combined after each addition.

Transfer 1/3 of batter (about 1 3/4 cups)to another medium bowl. Fold in melted chocolate and cocoa until combined.  Fold orange zest into remaining batter.

5.  Spread 1/3 of orange batter about one cup in bottom of the loaf pan. Spoon orange and chocolate batters by heaping tablespoonfuls in a chequerboard pattern in pan. Tap pan 2 to 3 times to help level batter and fill pan.  create another layer in a chequerboard pattern being sure to place orange on top of chocolate from first layer and vice versa.  tap pan again.  repeat with any remaining batter.  using a knife swirl batters together in a figure 8 pattern.

6.  Bake for 1hr 40 – 45mins.  cover with foil to prevent excess Browning if necessary.  Let cool in pan for 10 minutes. Remove from pan and let cool completely on a wire rack.

Garnish with icing sugar, if desired.
