Business Sydney executive director Paul Nicolaou has welcomed a wave of new hospitality openings across the city, saying the six upcoming venues reflect growing confidence in Sydney’s economy despite ongoing cost pressures and labour shortages.
Nicolaou said each new café or restaurant opening signalled “confidence in the city,” noting they generate jobs, attract visitors and add to Sydney’s vibrancy. He also urged support for entrepreneurs taking on significant financial risk in the current climate.
“We should celebrate and support the entrepreneurs who invest their time, capital and passion into opening new businesses,” he said.

Among the new developments is the expansion of the Dedes Waterfront Group, with founder Con Dedes preparing to open a large Greek restaurant, Alati, in Wentworthville as part of the Wenty Leagues redevelopment.
Dedes said the venue is designed to be “elevated yet welcoming” and aimed to serve both club members and the broader Western Sydney community. He described the concept as one centred on shared dining and Greek tradition, with a modern interpretation of classic dishes.
The restaurant takes its name from the Greek word for ‘salt,’ reflecting what Dedes called a philosophy of “balance and flavour,” and draws inspiration from family recipes and traditional Greek home cooking.
