Chef George Calombaris pays tribute to ‘hero’ dad after his death

Greek Australian chef George Calombaris has paid tribute to his “super hero” dad Jim following his death after a long battle with bowel cancer.

In a post on Instagram, Calombaris said he will never forget his dad’s fighting spirit.

“Today I say goodbye to my super hero,” Calombaris wrote in the post.

“A man that taught me to never give up. To be a lion, a warrior. Never to complain. To have tenacity. He taught me to love this gift of life. Dad thank you for inspiring your children, grandchildren and me to never give up. NEVER.”

Calombaris, who now runs The Hellenic House Project in Highett, also thanked the nurses and doctors at Royal Melbourne Hospital for looking after his dad during treatment.

Calombaris’ dad was first diagnosed with cancer in the 70s when George was six and again 10 years later.
